If you’re looking for something to satisfy your sweet tooth and your love of chocolate, this may be the dessert for you. The first time I had Flourless Chocolate Cake, I knew I wanted to add it to my recipe collection. This recipe comes together easily with melt-in-your-mouth goodness.
Ingredients
8 tablespoons unsalted butter, plus more for pan
½ cup bittersweet chocolate, chopped
¾ cup sugar
¼ teaspoon salt
½ teaspoon pure vanilla extract extract
3 large eggs
½ cup unsweetened cocoa powder, plus more for garnish if desired
Directions
1. Place rack in center of oven; preheat oven to 375°F. Lightly butter an 8-inch round cake pan, line bottom of pan with a round of parchment paper, and lightly butter paper.
2. Melt chocolate, chopped and unsalted butter in a double boiler. Alternate method: Add the butter and chocolate to a large microwave-safe bowl. Heat the chocolate and butter in the microwave for 30 seconds to 1 minute. Stir until the chocolate is fully melted and the mixture is smooth. If the mixture is not fully melted, microwave it for 10-20 seconds at a time and stir until smooth.
3. Remove from heat and whisk in sugar and salt to combine. Add vanilla and eggs, whisking until there are no streaks in the mixture. Sift ½ cup unsweetened cocoa powder over chocolate mixture and whisk until just combined. Pour cake batter into prepared pan and bake until top has formed a thin crust, about 25 minutes. Cool cake in pan on a wire rack 5 to 10 minutes. Loosen the edges of the pan with a knife and carefully turn the cake upside down onto a cake plate. Place a serving plate on top of the cake and flip one more time so that the cake is right side up.
4. Top with whipped cream and fresh fruit such as strawberries, raspberries, and/or blueberries. Garnish with cocoa powder or shaved chocolate and serve.
